Gondre Fried Rice Roll Inari Sushi with Beef Brisket

We previously made roll inari sushi, and this time, we’re presenting a unique version featuring gondre fried rice! This recipe incorporates spicy and savory stir-fried anchovies, tangy radish kimchi, and richly flavored pan-seared beef brisket, all rolled into inari sushi. You can enjoy it as Beef Brisket Roll Inari Sushi, Stir-Fried Anchovy Roll Inari Sushi, or Radish Kimchi Roll Inari Sushi. Ingredients

  • Beef Brisket (U-samgyeop) 100g (pan-seared and cooled)
  • Fresh Perilla Leaves (Kkaennip) 12 sheets
  • Store-bought Roll Inari Sushi Kit 200g (use only the dried tofu pouches and seaweed sheets)
  • Sushi Nori (Maki Kim) 8 sheets (or as needed)
  • Warm Gondre Fried Rice 350g
  • Salt to taste
  • Half-moon Pickled Radish (Danmuji) 10 pieces (julienned)
  • Spicy and Tangy Radish Kimchi (Moolkimchi) 2 Tbsp
  • Savory Stir-Fried Anchovies 2 Tbsp
  • Sweet and Savory Braised Nuts 2 Tbsp

Cooking Instructions

First, pan-sear the beef brisket (U-samgyeop) until golden brown and set aside to cool. Cooling the meat prevents it from falling apart when you roll the sushi, ensuring a neat presentation.

Let’s prepare the other ingredients for the roll inari sushi. Once the beef brisket is cooled, julienne the half-moon pickled radish. Also, gather fresh perilla leaves, braised nuts, radish kimchi, and stir-fried anchovies. Having everything prepped makes the assembly process much smoother.

The store-bought roll inari sushi kit usually comes with dried tofu pouches and seaweed sheets. We’ll be using only these two components for this recipe. You can save the seasoned vinegar and rice seasoning for other dishes. Now, it’s time to prepare the gondre fried rice. Place the frozen gondre fried rice in a microwave-safe container and heat it until warm. Using warm rice helps the seasonings meld better and provides a softer texture.

Lightly season the warm gondre fried rice with salt. Since the fried rice might already have some seasoning, taste it and adjust accordingly. We’re skipping the sesame oil to maintain the texture of the rice grains.

The amount of nori included in the kit might be limited, so having extra sushi nori (maki kim) on hand is helpful for making more rolls. Place a sheet of roll inari tofu pouch evenly on a sheet of nori. You can use the long, rectangular tofu pouches as they are, or for smaller rolls, cut the nori in half. I like to cut the nori in half and then trim the edges slightly to make rolling easier and more manageable. This allows for more filling and a tighter roll.

Spread the seasoned gondre fried rice thinly over the roll inari tofu pouch. Layer a perilla leaf on top of the rice, followed by the prepared beef brisket, radish kimchi, and stir-fried anchovies. Don’t forget the pickled radish for a delightful crunch! First, tightly roll the fillings along with the perilla leaf, then carefully roll the entire gondre tofu pouch to form a compact sushi roll.

Because we’re using gondre fried rice, the rice grains can be a bit loose and oily. This texture sometimes makes it a bit challenging to keep the rice from scattering. You might notice some rice grains sticking to your hands as you roll, but don’t worry too much about it. Rolling firmly will help minimize the issue.

Voila! The hearty Beef Brisket Gondre Roll Inari Sushi, generously filled with beef brisket, and the delicately flavored Gondre Roll Inari Sushi with anchovies and radish kimchi are ready to be enjoyed. These special ingredient rolls look absolutely delicious, don’t they? One small note: the fact that the gondre rice was prepared as fried rice was a slight disappointment. If it had been plain gondre rice, like freshly cooked rice, it would have been easier to season and likely offered a cleaner flavor. Personally, I feel gondre rice is best enjoyed as plain, freshly cooked rice rather than fried. Perhaps next time, I’ll try making it with plain brown rice or another type of fresh rice. While this recipe aimed for a healthier rice option, there’s a lingering thought about the base rice. Nonetheless, it’s a delightful roll inari sushi!
