Main Ingredients

  • 1 Squid (fresh or frozen)
  • 1/2 Onion
  • 4-5 leaves of Napa Cabbage or regular Cabbage
  • A small bunch of Green Onion

Seasoning

  • 1 Tbsp Minced Garlic
  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Spicy Gochugaru (Korean chili flakes)
  • 3 Tbsp Soy Sauce (Guk-ganjang or regular)
  • 3 Tbsp Allulose (or sugar)
  • 1 Tbsp Sesame Oil
  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

If using frozen squid, thaw it completely in cold water. Rinse the thawed squid thoroughly under cold running water. Make sure to clean out any debris or suckers from the tentacles.

Cut the cleaned squid into bite-sized pieces and place them in a large bowl. Slice the onion thinly after peeling it. Chop the napa cabbage or regular cabbage into bite-sized pieces as well. Using regular cabbage will add a delightful crunch.

Now it’s time to season the squid. Add 1 Tbsp minced garlic, 1 Tbsp gochujang, 2 Tbsp spicy gochugaru, 3 Tbsp soy sauce, and 3 Tbsp allulose (or sugar) to the bowl with the squid.

Mix everything gently with your hands or a spatula until the seasoning is evenly coated on the squid. Letting it marinate for a short while will enhance the flavors.

Heat a little oil in a large pan over medium heat. (Tip: For extra flavor, you can sauté chopped green onions in the oil first to make ‘green onion oil’ before adding the squid). Add the seasoned squid to the pan, but hold off on adding the vegetables for now. Stir-fry the squid lightly by itself. This step helps to remove some moisture, resulting in a chewier texture.

Once the squid is partially cooked, add the prepared onion and cabbage. The key to a great stir-fried squid is to cook it quickly over medium-high heat. To prevent the squid from becoming tough, gently tilt the pan and stir-fry rapidly, ensuring the squid and vegetables mix well.

Continue to stir-fry over high heat until the onions become slightly translucent and tender. Be careful not to overcook; you want to maintain the vegetables’ crispness.

Finally, add the chopped green onions and a sprinkle of sesame seeds for added fragrance. Stir-fry once more to combine all ingredients evenly.
