Easily make café-quality hotteok at home using a store-bought mix! I’ll share my special tips for an extra chewy texture and two delightful filling variations – red bean paste and Nutella – for a total of three irresistible flavors. Enjoy a crispy exterior with a warm, sweet, gooey center, perfect for a cozy winter treat!

Essential Ingredients

  • 1 Hotteok Mix package (refer to package instructions for exact amounts)
  • 180g Warm Water (around body temperature)
  • Cooking Oil (for pan-frying)

Cooking Instructions

Step 1

First, carefully read the instructions on your hotteok mix package. Prepare 180g of warm water. If your mix includes yeast, activate it in the warm water first and stir well. Then, add the hotteok mix powder and knead with a spatula or your hands until a cohesive dough forms and becomes slightly elastic. Adjust the consistency by adding a little more mix if too sticky, or a touch more water if too dry.

Once the dough is ready, place it in a bowl and cover it tightly with plastic wrap. Let it proof in a warm place for about 2 hours. This resting period allows the dough to rise, resulting in a fluffier and chewier hotteok. Properly proofed dough should roughly double in size.

Lightly grease your hands with cooking oil to prevent sticking. Divide the proofed dough into portions (about 1/4 of the total amount per hotteok). Roll each portion into a ball, then press your thumb into the center to create a small well, flattening it into a circular shape. Generously fill this hollow with your chosen filling: the seed mix, sweet cooked red bean paste, or thick Nutella. Red bean paste, while similar to the filling in Korean fish-shaped cakes (Bungeoppang), offers a uniquely delightful chewy texture when paired with hotteok dough. Carefully pinch the edges of the dough together to seal the filling completely, ensuring it won’t leak out during cooking.

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Once the oil is warm, carefully place the filled hotteok into the pan. Cook for about 1-2 minutes until lightly golden, then flip. Using a spatula or a hotteok press, gently press down on the hotteok to flatten it slightly and encourage even cooking. Continue to cook, flipping and pressing occasionally, until both sides are beautifully golden brown and crispy, and the filling is warm and gooey. (Oops, I slightly burned this one, but it adds a rustic, toasted flavor!) Enjoy these three delicious varieties of hotteok, customized to your liking!
