Brisket and Pickled Garlic Fried Rice: A Flavorful One-Bowl Meal

Brisket Stir-fry Ingredients

  • 100g brisket
  • 1/2 Tbsp soy sauce (flavor-enhancing)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp sugar

Pickled Garlic Fried Rice Ingredients

  • 15 cloves pickled garlic
  • 1 Tbsp pickled garlic brine
  • 1/6 white part of a leek
  • 1/4 carrot
  • 1/4 paprika
  • 1.5 servings rice (approx. 300g)
  • 1 egg yolk
  • A little chives

Cooking Instructions

Step 1

First, prepare the brisket stir-fry. Heat a pan over high heat and quickly stir-fry the brisket until lightly cooked. To prevent it from becoming tough, add 0.5 Tbsp soy sauce, 0.5 Tbsp minced garlic, and 0.5 Tbsp sugar once cooked. Stir-fry rapidly to coat evenly with the sauce. Transfer the cooked brisket to a plate for later.

Next, prepare the vegetables for the fried rice. Finely slice the white part of the leek. The aromatic leek will enhance the flavor of the fried rice.

Wash the fresh chives and chop them into small pieces. Chives add color and a fresh aroma to the dish.

Finely mince the carrot. Mincing instead of julienning allows the carrot to blend better with the rice and provides a softer texture.

Finely mince the paprika, similar to the carrot. Using red paprika will make the fried rice look more appetizing.

Prepare the pickled garlic by either thinly slicing it (for texture) or mincing it finely (to incorporate it well with other ingredients). Its zesty garlic flavor will boost the umami of the fried rice.

Now, let’s start making the fried rice. Using the same pan where the brisket was cooked, add the sliced leek and sauté over low heat to create leek oil. The infused leek oil will significantly improve the fried rice’s flavor. Add a little cooking oil if needed.

Once the leek oil is fragrant, add the minced carrot and paprika. Stir-fry them together until they become lightly browned and their sweetness is released.

When the vegetables are nicely sautéed and slightly browned, add the sliced pickled garlic and stir-fry for about 1 minute. This step allows the zesty flavor of the pickled garlic to meld with the vegetables.

Add the cooked rice and 1 Tbsp of pickled garlic brine to the pan. The brine adds a subtle umami and depth of flavor. Break up the rice with a spatula and stir-fry for at least 3 minutes over medium heat until the rice is loose and fluffy. Ensure each grain of rice is coated with the seasoning.

Plate the finished fried rice attractively. Generously top with the reserved brisket stir-fry. Garnish with fresh chives and an egg yolk to complete the Brisket and Pickled Garlic Fried Rice. Breaking the yolk and mixing it with the rice will add extra creaminess and richness.
