Aromatic Homemade Basil Pesto Cold Pasta
Boost Your Flavor with Homemade Basil Pesto Cold Pasta!
Hello everyone! How was your Monday? To overcome the ‘hellish’ start to the week, I’ve decided to treat myself to something delicious: Basil Cold Pasta! I’m even adding quail eggs for extra protein and a satisfying meal. This recipe is perfect for those who want a delightful and nutritious dish made with fresh, homegrown basil.
Main Ingredients- Fusilli pasta 500g
- Boiled quail eggs 2kg
- Canned sweet corn 1.5kg
- Fresh basil leaves 300g
- Toasted peanuts 100g
- Extra virgin olive oil 100g
Cooking Instructions
Step 1
First, let’s make the aromatic basil pesto sauce that will be the star of our pasta dish. In a blender or food processor, combine the freshly washed basil leaves, toasted peanuts for that lovely nutty flavor, extra virgin olive oil for richness, and a pinch of coarse salt and freshly ground black pepper for seasoning. Blend until you achieve a smooth and creamy consistency. You can adjust the amount of olive oil to reach your desired sauce thickness.
Step 2
Next, we’ll cook the fusilli pasta. Bring a large pot of generously salted water to a rolling boil. Add the fusilli and cook for about 8-10 minutes, or according to package directions, until al dente. Drain the pasta well and immediately toss it with 1-2 tablespoons of olive oil. This prevents the pasta from sticking together and maintains a delightful al dente texture. Let it cool completely before proceeding.
Step 3
Now it’s time to bring all the ingredients together. In a large bowl, combine the cooled fusilli pasta, drained sweet corn, and the peeled boiled quail eggs. Add a generous amount of the homemade basil pesto sauce you prepared earlier. Gently toss everything together, ensuring that the pasta and all the other ingredients are evenly coated with the vibrant pesto.
Step 4
Behold the perfect harmony of aromatic basil, nutty peanuts, chewy pasta, sweet corn, and tender quail eggs! Your delicious Basil Cold Pasta is ready. For the best flavor, I recommend chilling it in the refrigerator for a bit before serving. Enjoy your wonderfully refreshing meal!
