Main Ingredients

  • 300g small dried anchovies (Janmyeolchi)
  • 1 stalk green onion (white part only)
  • 1 Korean chili pepper (optional, for a spicy kick)

Seasoning

  • 1 swirl avocado oil (or cooking oil)
  • 2 Tbsp soy sauce
  • 1 Tbsp plum extract (or syrup)
  • 1/3 Tbsp ginger extract (or a pinch of ginger powder)
  • 1 Tbsp cooking wine (or mirin)

Cooking Instructions

Step 1

First, sift the small dried anchovies through a sieve to remove any dust or broken bits. Finely chop the white parts of the green onion. If using the Korean chili pepper, remove the seeds and mince it finely.

Heat a pan over medium-low heat and add a generous swirl of avocado oil. Add the chopped green onions and sauté slowly to create fragrant green onion oil. Cook until the subtle aroma of the green onions infuses the oil.

Once the green onion aroma is fragrant, add the prepared dried anchovies. Stir-fry over medium heat for 2-3 minutes. Coating the anchovies in oil will make them extra crispy.

When the anchovies are lightly fried, add the soy sauce, plum extract, ginger extract, and cooking wine all at once. Stir-fry quickly over high heat for about 1 minute, ensuring the sauce coats the anchovies evenly. Be careful not to burn the sauce.

If making this for children, omit the minced chili pepper or use a very small amount. If you plan to eat it right away, you can add a drizzle of sesame oil to your preference. However, for storing as a side dish, it’s best to omit the sesame oil, as its flavor can fade during storage.

Finally, sprinkle with toasted sesame seeds to finish the stir-fried anchovies. Mix well and your delicious Janmyeolchi Bokkeum is ready! Once cooled, store in an airtight container in the refrigerator for about 1-2 weeks.
