Main Ingredients

  • 1/2 medium pumpkin (kabocha squash)
  • 1 Tbsp mayonnaise
  • 1 Tbsp whole grain mustard
  • 2 Tbsp raisins

Cooking Instructions

Step 1

Because kabocha squash has a tough skin, it’s helpful to wash it thoroughly and then microwave it for 2-3 minutes before cutting. This softens the skin slightly, making it much easier to slice without straining your wrist.

Step 1

Step 2

Carefully scrape off any rough or bruised spots from the squash skin with a knife. If the remaining skin looks good, you can leave it on. The skin contains a lot of nutrients, so it’s a shame to waste it!

Step 2

Step 3

Slice the pumpkin into uniform pieces, about 0.5 to 1 cm thick. Place the slices in a small steamer basket and steam for about 8 minutes once the water is boiling. The steaming time can vary depending on the size and thickness of your pumpkin, as well as the heat. To check for doneness, insert a chopstick – it should go through easily. (In the photo, half was cut slightly larger for storage, while the other half was cut smaller for immediate use.)

Step 3

Step 4

Be careful not to overcook the pumpkin, as it can become mushy and lose its appealing texture. It should be tender but not overly soft. Aim for a point where a chopstick inserts smoothly with just a slight resistance.

Step 4

Step 5

When well-cooked, the skin of the kabocha squash becomes tender enough to eat comfortably. By including the skin, you ensure you’re getting the full nutritional benefits of the squash.

Step 5

Step 6

Transfer the steamed pumpkin to a bowl. Add the mayonnaise and whole grain mustard. These two ingredients will beautifully complement the pumpkin’s natural sweetness and add a lovely depth of flavor.

Step 6

Step 7

Finally, add the raisins and gently mix everything together until well combined. The sweet bursts from the raisins add a delightful chewy texture and enhance the overall taste. Your delicious pumpkin salad is ready!

Step 7

Step 8

This pumpkin salad is incredibly flavorful, even with minimal ingredients! Serve it generously on freshly baked bread or crispy crackers for an elegant brunch. It’s a versatile dish perfect as a hearty meal, a healthy snack, or even a unique side dish.
