I made a hearty Beef and Radish Soup today, something I’ve been craving! This soup features tender beef and refreshing radish, creating a perfect harmony of flavors. It’s an incredibly simple recipe that anyone can easily follow, leading to a bowl of soup so delicious you’ll want to finish it all with rice. Enjoy it with kimchi for an absolutely perfect meal!
Ingredients- 300g beef for soup (e.g., brisket)
- 1/5 Korean radish (approx. 300g)
- 1 tsp minced garlic
- 2 tbsp soup soy sauce (adjust to taste)
- 1 tsp sesame oil
- 1L anchovy broth or rice water
Cooking Instructions
Step 1
First, peel the Korean radish and slice it thinly, about 0.5 cm thick. Then, cut these slices into bite-sized squares, approximately 3-4 cm in length. This shape helps the radish absorb the flavors better.
Step 2
Pat the beef dry with paper towels to remove excess blood. Place the beef in a pan and stir-fry over medium heat. You don’t need to add extra oil, as the beef will release its own fat as it cooks.
Step 3
Once the beef starts to turn gray and is cooked, add the sliced radish to the pan. Drizzle in 1 tsp of sesame oil and stir-fry together for about 3-5 minutes until the radish becomes slightly translucent. This step helps infuse the radish with flavor.
Step 4
Add 1 tsp of minced garlic to the pan and sauté for about 1 minute until fragrant. This will enhance the overall depth of the soup’s flavor.
Step 5
Pour in 1L of the prepared broth (or rice water) and bring to a boil over high heat. Once boiling, reduce the heat to medium, add 2 tbsp of soup soy sauce, and season. It’s best to start with less seasoning and adjust with salt later if needed. Let it simmer for about 15-20 minutes, or until the radish is tender.
