Main Ingredients

  • 600g fresh lotus root

Perfectly Balanced Sauce

  • 1 cup (200ml) soy sauce
  • 2/3 cup (130g) sugar
  • 1/2 cup (100ml) corn syrup or oligosaccharide syrup
  • 2 Tbsp (30ml) vinegar
  • 0.5 Tbsp (5g) salt
  • 2 cups (400ml) water

Cooking Instructions

Step 1

Prepare your fresh lotus root. If it’s covered in mud, rinse it thoroughly under running water to remove any dirt. This step makes peeling easier.

Using a vegetable peeler, carefully peel the skin of the lotus root. Peeling thinly is recommended, as thick skins can result in a tough texture after braising.

Slice the peeled lotus root into bite-sized pieces, about 4-5mm thick. Place the sliced lotus root in a bowl, add 1 tablespoon of vinegar and a pinch of salt (or 0.5 Tbsp) per paper cup.

Add enough water to cover the lotus root. Boil for about 10 minutes in simmering water. This step is crucial for removing the lotus root’s characteristic astringent taste.

Drain the blanched lotus root well. In a pot, combine 2 cups of water, 1 cup of soy sauce, 2/3 cup of sugar, 1/2 cup of corn syrup, and the remaining 1 tablespoon of vinegar. Bring the mixture to a boil over high heat. Once boiling, add the blanched lotus root and continue to cook.

First, simmer over high heat for about 10 minutes to allow the flavors to meld. Then, reduce the heat to medium and continue to cook for another 20 minutes, allowing the sauce to reduce and thicken. Stir the lotus root occasionally to ensure even coating.

When the sauce has thickened to a glaze and coats the lotus root with a beautiful sheen, turn off the heat. Stir in 1 tablespoon of sesame oil and a sprinkle of toasted sesame seeds to finish. Your delicious braised lotus root is ready!
