Soft Carrot Pork Curry for the Whole Family
Make Delicious Pork and Carrot Curry Packed with Vegetables!
I had two large carrots languishing in my fridge and was wondering what to make. Then I decided to create a soft, creamy curry that my kids absolutely love. By finely grating the carrots and mixing them in, children can eat their vegetables more easily, and when sautéed with pork curry cuts, the flavor is truly wonderful! Carrots are rich in vitamins and dietary fiber, making them very healthy. Making it with extra care after a long time resulted in a fantastic meal that the whole family can enjoy!
Main Ingredients- 200g pork, cut for curry
- 1/2 large carrot
- 1/2 zucchini
Seasoning & Others- 6 Tbsp curry powder
- 650ml water

Cooking Instructions
Step 1
Wash the large carrot (1/2 piece) thoroughly and chop it into manageable pieces. Place the chopped carrot and 450ml of water into a blender and blend until smooth. (If using a blender, you might want to cut the carrot into a few pieces first to help it blend better.)
Step 2
Remove the seeds from the zucchini and finely dice it into pieces about 0.5cm in size. If the pieces are too large in the curry, the texture might not be as pleasant, so dice them small for easy eating, especially for children.
Step 3
Slightly heat a wok or deep pan and add a little cooking oil. Add the pork cut for curry and stir-fry over medium heat. Seasoning with a pinch of salt at this stage helps to remove any porky smell and enhances the flavor. Sauté until the surface of the pork is cooked.
Step 4
Once the pork is somewhat cooked, add the pre-diced zucchini and stir-fry together. Sauté lightly for about 1-2 minutes until the zucchini starts to become translucent.
Step 5
Pour the finely blended carrot puree from the blender into the wok. As the carrots cook, they will add color and sweetness to the curry.
Step 6
After adding the carrots, it’s crucial to stir continuously to prevent sticking to the bottom. It might seem watery at first, so keep stirring as it simmers.
Step 7
Now, add the remaining 200ml of water to reach the total water volume. (This is 450ml used in the blender + 200ml added = 650ml total).
Step 8
Bring everything to a simmer, allowing all the ingredients to meld together with the added water. As the ingredients cook, a delicious curry aroma will begin to fill your kitchen.
Step 9
Check if the zucchini is tender by piercing it with a fork or chopstick. Once the vegetables are cooked, add the curry powder. (To prevent lumps, it’s best to dissolve the curry powder in a little water beforehand before adding it.)
Step 10
After adding the curry powder, be sure to reduce the heat to medium-low. It’s prone to sticking to the bottom, so the key is to keep stirring while it simmers. It might seem a bit thin initially, but as it gently cooks, it will quickly thicken to that wonderful, rich curry consistency.
Step 11
