Main Ingredients- 1 large green onion
- 1 king oyster mushroom
- 1 pack of enoki mushrooms
- 1 shiitake mushroom
- 2 handfuls of bean sprouts
- 1 carrot
- 1 onion
- Thinly sliced beef brisket, about 200g (or thinly sliced beef for bulgogi)
Seasoning for Vegetables- Pinch of black pepper (4 shakes)
- 2/3 Tbsp sugar
- 1 pinch of salt
Peanut Dipping Sauce- 1 Tbsp peanut butter
- 1/2 cup water (100ml)
- 1 Tbsp sugar
- 2 Tbsp fish sauce
- 2 Tbsp vinegar
- 2 Tbsp toasted sesame seeds
- 1/2 Tbsp minced garlic
- Pinch of black pepper (4 shakes)
- 2/3 Tbsp sugar
- 1 pinch of salt
Peanut Dipping Sauce- 1 Tbsp peanut butter
- 1/2 cup water (100ml)
- 1 Tbsp sugar
- 2 Tbsp fish sauce
- 2 Tbsp vinegar
- 2 Tbsp toasted sesame seeds
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
Wash and prepare all the vegetables. Slice the green onion into large julienne strips. (Chef Baek sliced them diagonally, but you can cut them to your preference.)

Trim the base of the enoki mushrooms and separate them into individual strands.

Slice the king oyster mushroom into julienne strips, similar in length to the enoki mushrooms.

Remove the woody ends of the enoki mushrooms and separate them into clusters.

Remove the stem from the shiitake mushroom and thinly slice it. (If using dried shiitake mushrooms, soak them in lukewarm water until softened before slicing.)

Rinse the bean sprouts thoroughly and drain them. About 2 handfuls should be sufficient.

Peel the carrot and slice it into thin julienne strips. Carrots add color, so feel free to adjust the amount or omit them based on your preference.
