Create a delicious and satisfying Jeyuk Bokkeum at home with this recipe inspired by the YouTube channel ‘Bapsang Charyeojuneun Namja’. This dish, featuring spicy and sweet seasoning with fresh vegetables, is a perfect accompaniment to rice, guaranteed to make you finish your meal in no time.
Main Ingredients- 400g Pork (neck or belly, cut into bite-sized pieces)
- 1 stalk Green Onion (cut into thick diagonal slices)
- 1 Onion (thinly sliced)
- 5 cloves Garlic (thinly sliced)
- Optional vegetables (e.g., carrots, baby bok choy)
Spicy & Sweet Sauce- 3 Tbsp Gochugaru (Korean chili flakes – adjust to spice preference)
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 0.5 Tbsp Oligodang (corn syrup – adjust sweetness)
- 1 Tbsp Sugar
- 1 Tbsp Mirin or Soju (to remove pork odor)
- Pinch of Black Pepper
- 1 tsp Ginger Powder (optional, can be omitted)
- Sesame Oil (for finishing)
- 3 Tbsp Gochugaru (Korean chili flakes – adjust to spice preference)
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 0.5 Tbsp Oligodang (corn syrup – adjust sweetness)
- 1 Tbsp Sugar
- 1 Tbsp Mirin or Soju (to remove pork odor)
- Pinch of Black Pepper
- 1 tsp Ginger Powder (optional, can be omitted)
- Sesame Oil (for finishing)
Cooking Instructions
Step 1
Pat the pork dry with paper towels to remove excess blood and moisture. Properly draining the pork is key to a clean flavor without any gamey smell.
Step 2
Heat a pan over medium-low heat with a little cooking oil. Add the sliced garlic and sauté slowly until golden brown and fragrant. This infuses the oil with a lovely garlic aroma.
Step 3
Once the garlic is fragrant, add the pork to the pan and stir-fry over high heat. When the surface of the pork turns white, add 1 Tbsp sugar, 1 Tbsp soju (or mirin), a pinch of black pepper, and 1 tsp ginger powder. Continue to stir-fry, ensuring the pork’s odor is neutralized.
Step 4
When the pork is about 70% cooked and has changed color, add all the pre-mixed sauce ingredients (gochugaru, gochujang, soy sauce, oyster sauce, oligodang, sugar). Stir well to coat the pork evenly with the sauce.
Step 5
Once the sauce has coated the pork, add the remaining 3 Tbsp of gochugaru. This will enhance the spicy flavor and give the dish a more vibrant, appetizing color. (Feel free to add more if you prefer it spicier.)
Step 6
Add all the prepared vegetables, including the green onions and onions, to the pan. Stir-fry over high heat until the vegetables are slightly tender and the onions become translucent. Be careful not to overcook, as the vegetables can become watery.
Step 7
Just before turning off the heat, drizzle in some sesame oil for an extra nutty aroma. Your delicious Jeyuk Bokkeum is now ready! Serve it hot over a bowl of steamed rice for a delightful meal.
