Today, I’m sharing a super simple Kimchi Kongbiji Jjigae that you can make easily and quickly, even without a blender. When you don’t feel like fussing, throwing everything in at once is the best! I briefly considered adding seafood, but decided to stick with just kimchi and fermented shrimp for a clean, mild flavor. Even without pork, the umami from the kimchi and the savory broth create a deep and refreshing taste – perfect for a winter meal. Serve it bubbling in a earthenware pot for a satisfying meal.

Ingredients

  • Kongbiji (ground soybean paste) 600g (store-bought or homemade)
  • Well-fermented Kimchi 200g (finely chopped)
  • Fermented Salted Shrimp 1 Tbsp (including the brine)
  • Kimchi Brine 1 ladleful (approx. 100ml)
  • Broth 600ml (anchovy-kelp broth, rice water, or plain water)

Cooking Instructions

In a pot or earthenware pot, add the kongbiji. Pour in 600ml of broth and stir with a spoon to break up any clumps, creating a smooth mixture. Using rice water will add a more savory and creamy texture.

Now, let’s add the seasonings. Add 1/2 Tbsp minced garlic (adjust to your preference), about 20g of finely chopped scallions, and 1 Tbsp of fermented salted shrimp. Make sure to include the brine from the shrimp for better seasoning and enhanced umami.

Next, add the kimchi. Stir in 200g of finely chopped kimchi and 1 ladleful (about 100ml) of kimchi brine. The tanginess and seasoning from the kimchi will blend with the kongbiji, adding a spicy yet refreshing flavor.

Combine all ingredients and bring to a simmer over medium heat. Stir occasionally to prevent the kongbiji from sticking. Once it starts boiling, reduce the heat to low and simmer for another 5-7 minutes until the kongbiji is fully softened and integrated. This Kimchi Kongbiji Jjigae, with its spicy kimchi and savory soybean paste, will offer a deep and refreshing broth. Enjoy it piping hot with a bowl of rice!
