Easy Air Fryer Tomato Stew Recipe: A Wonderful Meal Anyone Can Make!
Hello everyone! Today, I’m sharing a very special recipe using an air fryer. Inspired by popular recipes from ‘143 Golden Air Fryer Recipes’ and ‘The Ultimate Air Fryer Recipes by Da-Dae-Da’, we’ve created a delightful tomato stew with a flavor profile reminiscent of curry. This dish is perfect as a simple yet delicious meal or a healthy diet option. Let’s get started!
Main Ingredients- 1 ripe, fully matured tomato
- 40g carrot
- 40g eggplant
- 1 small honey sweet potato
- 1/4 yellow bell pepper (approx. 10g)
- 1/4 zucchini (approx. 40g)
- 5 cocktail shrimp
Cooking Instructions

1. Let’s start with preparing the vegetables, the foundation of this delicious stew! First, dice the honey sweet potato slightly smaller than the other vegetables, about the size of a fingernail. To prevent browning, soak the diced sweet potato in water immediately. Set aside and drain along with other vegetables once they are prepped.

2. Wash and prepare the eggplant, zucchini, yellow bell pepper, and carrot. Dice them into bite-sized cubes, similar in size to the sweet potato, for a pleasing presentation. Core and dice the tomato as well. If using frozen cocktail shrimp, thaw them.

3. Now, let’s make the delicious sauce! In an oven-safe or air fryer-safe dish with some depth, combine 7 Tbsp tomato ketchup, 1.5 Tbsp oyster sauce, 0.5 Tbsp minced garlic, and 0.5 Tbsp Mirin. Add 200mL of water and stir until well combined. (For extra flavor depth, you can add 10g of butter and a bay leaf.) Add the prepared vegetables and shrimp to the sauce and toss gently to coat. Place the dish in the air fryer and cook at 180°C (350°F) for about 25 minutes. Stirring halfway through will help ensure even cooking.

4. The wonderful aroma is filling the kitchen! Once cooking is complete, carefully remove the stew from the air fryer. While still warm, sprinkle generously with Parmesan cheese.
