It also plays a role in protecting the stomach, making it a good alternative to boiled eggs when served with naengmyeon. We’ve topped the refreshing Nest Naengmyeon with deodeok grilled in a gochujang sauce, packed with various health benefits! This dish is simple yet fulfills both taste and nutrition, and we’ve prepared an easy-to-follow recipe for everyone to make it effortlessly. 🙂
Main Ingredients- Nongshim Nest Naengmyeon 1 pack (Dongchimi cold noodles)
- Deodeok 35g
- Green onion (scallion) 1/2 stalk
- Pickled radish wraps (Ssammu) 2 sheets
- Starch 1 Tbsp
Deodeok Seasoning- Gochujang (Korean chili paste) 1 Tbsp
- Sugar 1/3 Tbsp
- Oligosaccharide 1/3 Tbsp
- Ketchup 1/3 Tbsp
- Water 1 Tbsp

Cooking Instructions
Step 1
First, prepare all the ingredients for today’s dish. Clean and prepare the deodeok, and wash the green onions and pickled radish wraps.
Step 2
Finely chop the green onion. We’ll be using the green parts primarily as a garnish, which will add a fresh aroma.
Step 3
Peel the deodeok. Place the peeled deodeok in a plastic bag and gently pound it with the back of a knife or a mallet. This process softens the fibrous texture of the deodeok, making it easier to chew and allowing the seasoning to penetrate better.
Step 4
When pounding, avoid hitting too hard. Aim to flatten and even out the deodeok along its grain. If some parts are thicker, pound them a bit more. Now it’s almost ready for grilling!
Step 5
Next, let’s make the seasoning sauce for the deodeok. In a bowl, combine the gochujang, sugar, oligosaccharide, ketchup, and water. Mix well. It’s important to adjust the consistency so it’s not too thick.

Evenly sprinkle the starch over the deodeok that you will be grilling. Coating with starch helps the sauce adhere better when cooked and contributes to a chewy texture. Sprinkle it gently to avoid clumps.

Heat a pan over medium-low heat, add a little cooking oil, and place the prepared deodeok. Grill until golden brown on both sides. Be careful not to burn it by using excessively high heat.

Once the deodeok is partially cooked, spread the prepared spicy and sweet seasoning sauce evenly on both sides. Apply the sauce while managing the heat to prevent burning.

Place the sauced deodeok back into the pan and grill once more over low heat. Gently press down as it cooks to help the sauce adhere well to the deodeok. You’ll start to smell the fragrant deodeok and the sweet aroma of the sauce.

After grilling the deodeok, sprinkle the pre-chopped green onions on top as a garnish. The vibrant green of the scallions contrasts beautifully with the reddish hue of the deodeok, making it visually appealing.

Now it’s time to cook the noodles. Follow the instructions on the Nongshim Nest Naengmyeon package. Add the noodles and the enclosed garnishes to boiling water, and simmer on low heat for about 3 minutes. Gently stir to prevent the noodles from sticking together.

Drain the cooked noodles in a colander. Immediately rinse them thoroughly under cold running water to remove excess starch, and drain them completely. This step ensures the noodles are springy and don’t become mushy, enhancing the dining experience.

For the naengmyeon broth, mix the enclosed broth with cold water according to your preference. This is a crucial step that determines the flavor of the naengmyeon, so ensure it’s chilled.

Prepare 2 sheets of pickled radish wraps (ssammu). These will add a refreshing tang to your naengmyeon.

Roll up each sheet of ssammu tightly. Rolling them this way makes them visually appealing and easier to eat.

Thinly julienne the rolled ssammu. Slicing the rolled wraps creates a natural, flower-like appearance, making the dish even more appetizing.

Gently separate the julienned ssammu. This fluffing makes the garnish look more abundant and visually attractive.

To make the cold noodles even colder, crush some ice to add to the prepared broth. Use a blender or similar appliance to finely crush the ice.
