  • 1/3 tsp MSG-rich salt (or pink salt)
  • 1/2 tsp minced garlic
  • Pinch of black pepper (about 2 shakes)

First, prepare 5 potatoes, which are the main ingredient. Medium-sized potatoes, about 6-7cm in diameter, are ideal.

When shredding the potatoes, since they can be slippery, it’s safer and more stable to gently pierce the tip of your knife into the potato and then cut downwards, similar to how you would cut radishes or cucumbers.

Shred the potatoes into thin strips, about 0.7cm thick. Don’t worry too much about the irregular shapes of the leftover ends; they can be a bit thicker.

Rinse the shredded potatoes under running water to remove excess starch. This step helps prevent them from sticking together when stir-fried and results in a cleaner texture. After rinsing, drain them thoroughly in a colander.

Now, let’s start the stir-frying process. Pour 3 tablespoons of water into a pan and add all the drained shredded potatoes.

Cover the pan and cook the potatoes over medium heat. This step is to gently cook the potatoes until they are slightly tender. Be careful not to overcook them, as they might break apart when stir-fried later. Stir them once or twice in between, and cook for about 2 minutes, or until the potatoes become translucent and most of the water has evaporated. The exact cooking time may vary depending on the amount of potatoes and the heat level, so it’s important to check the potato’s texture.

Once the potatoes are partially cooked, add 3 tablespoons of cooking oil and continue to stir-fry over medium heat. This stage is about browning the edges of the potatoes to enhance their flavor. Depending on the thickness of the potato strips and the heat, this should take about 5 minutes.

As the potatoes begin to brown and release a delicious aroma, tilt the pan slightly to one side to gather the oil. Then, add 1/2 teaspoon of minced garlic to one side of the pan and sauté it in the oil until fragrant. This infuses the dish with garlic flavor.

Once the garlic is cooked, mix it with the potatoes. Now it’s time to season. Add 1/3 teaspoon of MSG-rich salt (or your preferred salt) to taste.
