Main Ingredients- Well-fermented Dongchimi (including the brine)
- Store-bought Naengmyeon (cold noodle) broth
- Thin wheat noodles (Somen)

Cooking Instructions
Step 1
First, let’s prepare the toppings that will elevate the flavor of your Dongchimi noodles. Slice the radish from the Dongchimi into bite-sized, flat pieces. Wash the cucumber and julienne it finely. These toppings will not only make the dish visually appealing but also add a richer texture and flavor when placed on top of the noodles.

Now it’s time to cook the noodles. Bring a large pot of water to a rolling boil and add the somen noodles. For a serving of two, cook for approximately 3 minutes and 30 seconds. Be careful not to overcook them, as they can become mushy. Once cooked, immediately rinse the noodles thoroughly under cold running water to remove excess starch. Drain them well in a colander. This step ensures the noodles are perfectly chewy and won’t clump together.
Step 3
Finally, the most crucial step: assembling the dish! Combine the Dongchimi brine and store-bought naengmyeon broth in a ratio of about 7:3. The tangy brine and the cool broth create a fantastic flavor balance. Place the cooked and drained somen noodles in a serving bowl, then pour the prepared broth mixture over them. Artfully arrange the sliced Dongchimi radish and julienned cucumber on top. Your delicious Dongchimi noodles are now complete! For extra tanginess, you can add a splash of vinegar, and for a bit of a kick, a dab of prepared mustard. A sprinkle of sesame seeds will add a final touch of flavor and visual appeal.
