  • Eggs: 2.5 (1 for frying, 0.5 for batter)
  • Thick-cut bacon: 5 slices
  • Black pepper: to taste (optional)

First, let’s prepare the pancake batter. In a bowl, combine 100g of pancake mix with 50ml of water or milk. Crack in half an egg (0.5 egg) and whisk everything together until smooth and free of lumps. If the batter is too thick, add a little more liquid; if it’s too thin, add a bit more mix until you reach your desired consistency.

Heat a lightly oiled pan over medium-low heat. Pour about one ladleful of batter onto the pan to form a pancake. Cook slowly over low heat until bubbles start to appear on the surface. Once you see bubbles, carefully flip the pancake and cook the other side until golden brown. Make a total of two pancakes.

In the same pan (or a clean one), lay out 5 slices of bacon and cook them until they are golden brown and crispy on both sides. The bacon will render its own delicious fat, adding wonderful flavor. Be mindful of the heat to prevent the bacon from burning.

Now, let’s fry the eggs. Add a little oil to the pan and crack in two eggs. Fry them to your preferred level of doneness. I personally enjoy a sunny-side-up with a slightly runny yolk, so I didn’t fully cook the yolk. Feel free to cook them to your liking, perhaps over-easy or fully cooked. Lightly season with pepper if desired.
