Savory and Tender Black Bean Rice with Crispy Bacon
A Healthy and Hearty Meal for Sustained Energy
I used to add black beans to my rice while cooking, but making them separately turned out much more nutty, tender, and delicious! This recipe offers a delightful twist for a satisfying meal.
Main Ingredients- 1 cup black beans
- 2 cups water
- 2 eggs
- 1/4 carrot, thinly sliced
- 1 medium tomato
- 3 strips bacon, cut into bite-sized pieces
- Freshly cooked rice, as needed

Cooking Instructions
Step 1
Rinse the black beans thoroughly. Soak them in 2 cups of water and refrigerate for about 12 hours to allow them to swell. (It’s convenient to soak them overnight and cook them in the morning.)
Step 2
Place the soaked black beans into a pressure cooker with enough water to cover them and cook on the rice setting. (Adjust the water amount based on the swollen bean volume; you can use it like regular rice water.)
Step 3
Heat a frying pan with a little cooking oil and fry the eggs to your desired doneness. For an extra tender texture, try making them sunny-side up with a runny yolk.
Step 4
In the same pan, add a little grapeseed oil or olive oil and sauté the thinly sliced carrots until they are golden brown on both sides. Sautéing carrots first enhances their natural sweetness.
Step 5
Once the carrots are partially cooked, add the halved tomatoes to the pan and sauté them together. Cook the tomatoes just until their skins begin to wrinkle to maintain their freshness.
Step 6
Arrange the sautéed vegetables and bacon pieces in the air fryer basket. Cook at 170°C (340°F) for 5 minutes. The rendered bacon fat will coat the vegetables, adding rich flavor.
Step 7
After 5 minutes, flip the bacon and vegetables. Continue cooking for another 5 minutes at 170°C (340°F), or until the bacon is crispy and the vegetables are tender.
Step 8
Serve the freshly cooked black bean rice, fried egg, and sautéed vegetables and bacon together on a plate. Season lightly with salt and pepper to taste for a simple, healthy, and satisfying meal. Any leftover black bean rice can be stored in the refrigerator for later enjoyment.
