  • Category : Main dish
  • Ingredient Category : Pork
  • Occasion : Holiday food
  • Cooking : Pan-fry
  • Servings : 4 servings
  • Cooking Time : Within 60 minutes
  • Difficulty : Anyone

Yukjeon Ingredients

  • Thinly sliced pork (e.g., sirloin or eye of round) 480g
  • Fresh eggs 3
  • Aromatic chives 30g (approx. 1/4 bunch)
  • All-purpose flour, sifted 1/2 cup (approx. 50g)
  • Minced garlic 1 Tbsp (15g)
  • Pinch of black pepper (using freshly ground pepper adds extra fragrance)
  • Cooking oil (canola, grapeseed, etc.) generous amount
  • Pinch of salt (adjust to taste)

Cooking Instructions

Step 1

First, let’s prepare the egg wash for our Yukjeon! Crack 3 fresh eggs into a bowl. Lightly whisk them with a fork until the yolks and whites are just combined. Avoid over-whisking; a gentle mix is best.

Step 1

Step 2

Next, we’ll add aromatic chives to the egg mixture. Wash and thoroughly dry the chives, then finely chop them into small pieces, about 0.5 cm long. Finely chopped chives mix well into the egg batter and add a pleasant texture when cooked.

Step 2

Step 3

Now, it’s time to season the egg wash. Add about 1/2 teaspoon of minced garlic (or adjust to your preference), and a pinch of black pepper and salt. The amount of salt might need adjusting depending on the saltiness of your pork, so tasting is recommended. Mix these ingredients well with the chives.

Step 3

Step 4

Now, let’s season the star of the dish: the pork! Place the thinly sliced pork (like those used for bulgogi) in a bowl. Add 1 tablespoon of minced garlic, a pinch of black pepper, and 1 teaspoon of salt. Gently massage the ingredients into the pork with your hands, ensuring the seasoning is evenly distributed. Be careful not to knead too vigorously, as this can make the meat tough.

Step 4

Step 5

Next, we’ll coat the seasoned pork with flour. Spread a generous amount of flour on a wide plate. Dip each piece of pork into the flour, coating both sides evenly. Shake off any excess flour; a thin, light coating is ideal to prevent a doughy texture.

Step 5

Step 6

Now, coat the floured pork with the delicious egg wash. Pour enough egg mixture to generously coat each piece of meat. Immediately transfer the egg-coated pork to a lightly oiled pan set over medium-low heat. It’s crucial to manage the heat so the egg doesn’t burn while the pork cooks through.

Step 6

Step 7

Place the egg-coated pork onto the preheated pan. Cook until one side is golden brown and set, then carefully flip it over and cook the other side until equally golden brown and cooked through. Once both sides are beautifully browned, your super simple, golden-hued Yukjeon is ready!

Step 7

Step 8

Voila! Your delicious pork Yukjeon, a perfect Chuseok holiday delicacy, is complete! It’s best enjoyed warm. This irresistible dish is a must-try. Enjoy!
