Healthy and Delicious Side Dish: How to Make Braised Sweet Potatoes with Soy Sauce

Main Ingredients- 2 medium sweet potatoes
- 1 small carrot
- 2 tbsp cooking oil
- 1 piece dried kelp (approx. 5x5cm)
Braising Sauce- 80ml water (approx. 1/3 cup)
- 3 tbsp soy sauce
- 2 tbsp cooking wine (mirin)
- 2 tbsp allulose (or corn syrup/oligosaccharide)
- 0.5 tbsp toasted sesame seeds
- 0.5 tbsp sesame oil

Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Wash the sweet potatoes and carrot thoroughly.
Step 2
Peel the sweet potatoes and carrot. Then, cut them into bite-sized pieces (about 2-3 cm cubes) that are easy to eat. Cutting them to a similar size will ensure they cook evenly.
Step 3
Heat the cooking oil in a pan over medium heat. Add the sweet potatoes and carrot, and stir-fry for 1-2 minutes. This step coats the vegetables in oil, which helps them become softer and glossier during the braising process.
Step 4
Carefully pour 80ml of water into the pan with the coated sweet potatoes and carrot. Cover the pan with a lid, reduce the heat to medium-low, and steam/braise for about 3 minutes until the vegetables are tender.
Step 5
Once the sweet potatoes and carrot are partially cooked, add the piece of dried kelp, 2 tbsp of cooking wine, and 3 tbsp of soy sauce. The kelp will add a wonderful umami depth to the dish.
Step 6
Stir occasionally with a spatula or spoon to ensure the sauce is evenly distributed. Continue to braise for another 3-5 minutes, allowing the liquid to reduce and the flavors to penetrate the vegetables.
Step 7
Add 2 tbsp of allulose (or your preferred sweetener) to the pan. Stir-fry for about 1 more minute until most of the sauce has evaporated. This final sauté will give the sweet potatoes and carrot a beautiful, appetizing sheen.
Step 8
Turn off the heat. Stir in 0.5 tbsp of toasted sesame seeds and 0.5 tbsp of sesame oil. Mix well to combine. Your delicious braised sweet potatoes with soy sauce are now complete! Enjoy them with warm rice.
