Sandwich Ingredients- 2 slices of bread
- 3 eggs
- 3-4 leaves of fresh lettuce
- 1 ripe tomato
- 3 slices of ham
Egg Mayo Sauce- 2 Tbsp good quality mayonnaise
- 1 Tbsp flavorful whole grain mustard
- 1/2 Tbsp sweet corn syrup (or honey)
- A pinch of freshly ground black pepper (to taste)
- 2 Tbsp good quality mayonnaise
- 1 Tbsp flavorful whole grain mustard
- 1/2 Tbsp sweet corn syrup (or honey)
- A pinch of freshly ground black pepper (to taste)
Cooking Instructions
Step 1
Boil the 3 eggs until they are hard-boiled (about 10-12 minutes). Once cooked, cool them under cold running water, then peel off the shells. Mash the eggs thoroughly using a fork. It’s okay to leave some small chunks for texture.
Step 2
In a bowl, combine the mashed eggs with the mayonnaise, whole grain mustard, corn syrup, and black pepper. Mix everything well until the ingredients are evenly distributed and form a cohesive sauce. Ensure the sauce coats the eggs nicely.
Step 3
Wash the tomato thoroughly and then slice it into uniform rounds, about 0.5 cm thick. The fresh tomato adds a lovely contrast and juiciness to the sandwich.
Step 4
Lightly toast one side of each slice of bread using a toaster or a lightly buttered pan. This creates a delightful crisp texture and prevents the bread from becoming soggy from the fillings.
Step 5
On the untoasted side of one slice of bread, spread a thin layer of mayonnaise. Then, add a small amount of whole grain mustard, if desired, for an extra layer of flavor. This also helps the fillings adhere better.
Step 6
Layer the ingredients on the prepared bread slice: start with the fresh lettuce leaves, followed by the ham slices, and then the tomato slices. Finally, generously spoon the egg mayo mixture over the tomato.
Step 7
Place the second slice of bread on top to complete the sandwich. Gently press down to help the fillings settle.
Step 8
Wrap the sandwich tightly with plastic wrap. This will help keep its shape intact. Once wrapped, carefully slice the sandwich in half using a sharp knife. Enjoy your delicious, homemade egg mayo sandwich!
