  • 2 cups soju (or rice wine, for odor removal)

Begin by rinsing the lobsters thoroughly under cold running water. If you’re using frozen lobsters, it’s best to thaw them in the refrigerator for several hours or place them in cold water to defrost before cooking. For fresh lobsters, a good rinse under cold water is all you need to prepare them.

Cleaning the lobster shell is an important step for a clean taste. Use a toothbrush or a clean scrubbing brush to gently scrub the lobster’s back, legs, and belly. Pay extra attention to the underside of the belly and around the mouth area, as these can harbor impurities or digestive fluids. This thorough cleaning helps to reduce any fishy odor and ensures a cleaner flavor.

Now, it’s time to arrange the cleaned lobsters in the steamer. Here’s a crucial tip: place the lobsters belly-side up! This way, the delicious juices and innards won’t leak out during steaming, keeping the lobster moist and infusing the meat with its natural flavors. This simple step significantly enhances the final taste.

To effectively neutralize any potential ‘sea smell’ and enhance the lobster’s delicate flavor, add 2 cups of soju (Korean distilled spirit) to the water in your steamer pot. Soju acts as a natural deodorizer and also helps to tenderize the lobster meat. Be mindful not to overfill the steamer with water; just enough to create steam is perfect.

It’s time to steam the lobsters! Once the water in the steamer begins to boil, place the lobsters inside, cover, and steam over high heat for 20 minutes. After the 20 minutes are up, turn off the heat but leave the lid on for an additional 5 minutes to allow the lobsters to rest and finish steaming gently. This resting period ensures the lobster is cooked through and incredibly tender. Once done, quickly remove the lobsters from the steamer and serve immediately while they are warm and succulent!
