Essential Ingredients- 1/2 bunch fresh spinach
- 2 stalks (10cm each) green onion
- 1 red chili pepper (optional, for a bit of heat)
- 1 liter anchovy-kelp broth
- 1/2 cup peeled and deveined raw shrimp
Seasoning Ingredients- 2 Tbsp soybean paste (miso)

Cooking Instructions
Step 1
First, prepare the spinach by trimming the roots and removing any yellowed leaves. Wash it thoroughly under running water. Slice the green onions diagonally about 1 cm thick, and finely chop the red chili pepper.
Step 2
Pour 1 liter of anchovy-kelp broth into a pot. Dissolve 2 tablespoons of soybean paste into the broth, ideally by sifting it through a fine-mesh sieve to ensure no lumps remain. Bring to a gentle boil over medium heat, stirring occasionally, to bring out the savory flavor of the miso.
Step 3
Once the broth is simmering, add 1 tablespoon of minced garlic and 1/2 cup of prepared raw shrimp. Cook just until the shrimp turn opaque and are cooked through; avoid overcooking, as this can make the shrimp tough.
Step 4
Now, add the thoroughly washed spinach to the pot. Spinach wilts quickly, so don’t overcook it. After adding the spinach, taste the broth. If it needs more seasoning, add 1 tablespoon of soup soy sauce to adjust the flavor.
Step 5
Once the spinach has just wilted, add the chopped red chili pepper and green onion. Simmer for another 1-2 minutes to allow their fresh flavors to meld into the soup. This creates a delicious spinach miso soup. For a beautiful garnish, you can add some finely sliced red bell pepper as well.
