  • 1 pack silken tofu (approx. 300-400g)
  • 3 eggs

First, crack the 3 eggs into a bowl. Whisk them thoroughly with a fork or whisk until the yolks and whites are well combined and the mixture is smooth. Ensure there are no lumps for a silky texture.

Finely mince the 3 Cheongyang peppers (or adjust the quantity based on your spice preference). Wash them, remove the stems, and chop them very finely. In a small bowl, combine the minced peppers, 1 Tbsp soy sauce, and 1 Tbsp oyster sauce. Mix well to create a flavorful dipping sauce. Set aside.

Drain the excess water from the silken tofu by placing it in a sieve over a bowl. This step helps the egg custard set firmly and prevents it from becoming watery. Let it drain for about 5 minutes.

Lightly grease a pan with cooking oil and heat it over medium-low heat. Add the drained silken tofu to the pan. Using a spoon or spatula, break the tofu into bite-sized pieces (about 2-3 cm), roughly chopping it as you go. It’s best to leave some small chunks for a pleasant texture.

Spread the broken tofu evenly in the pan. Pour the whisked egg mixture over the tofu, ensuring it covers the tofu well. Once the egg mixture starts to set around the edges, cover the pan with a lid and reduce the heat to low. Let it steam gently for about 5-7 minutes, or until the egg is cooked through and has a soft, custard-like consistency. You can check for doneness by inserting a toothpick; it should come out clean.

Just before turning off the heat, drizzle the prepared sauce evenly over the steamed egg custard. Sprinkle with sesame seeds for a nutty aroma and a final touch. Your nutritious and delicious silken tofu egg custard is ready to be enjoyed! It’s best served warm.
