Spicy and Sweet Pork Bulgogi with Chives

Today, I’m introducing a spicy and sweet pork bulgogi with chives that you can easily enjoy at home. The chewy pork shoulder, fragrant chives, and crisp vegetables make this dish an absolute rice thief! Create a special meal that the whole family can enjoy together!

Main Ingredients

  • 300g Pork Shoulder (sliced into bite-sized pieces)
  • 1 bunch Chives (cut into approximately 5-6cm lengths)
  • 1/4 Onion (sliced into strips)
  • A small amount of Carrot (thinly sliced into strips)
  • 2 Fresh Shiitake Mushrooms (stems removed, thinly sliced)
  • 2 Korean Red Chili Peppers (seeds removed, thinly minced, adjust to spice preference)

Sauce

  • 2 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Maesilcheong (Korean plum syrup)
  • 1 Tbsp Ginger Syrup
  • 2 Tbsp Minced Garlic
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Cooking Wine (Mirin or Sake)
  • 1 Tbsp Sugar
  • A pinch of Black Pepper (to taste)

Cooking Instructions

Step 1

First, prepare the main ingredients: 300g of pork shoulder and fresh chives. Slicing the pork into bite-sized pieces will make it easier to cook.

Wash the chives and cut them into lengths of about 5-6cm. Slice the onion, fresh shiitake mushrooms, Korean red chili peppers, and carrots into strips of appropriate size so they don’t fall apart. You can adjust the amount of chili peppers depending on how spicy you like it.

Now, let’s make the delicious sauce! In a bowl, combine 2 Tbsp of gochujang, 2 Tbsp of gochugaru, 2 Tbsp of minced garlic, 1 Tbsp of ginger syrup, and 2 Tbsp of maesilcheong.

Add 1 Tbsp of soy sauce for umami.

Add 1 Tbsp of cooking wine to remove any gamey smell from the pork and add flavor, and 1 Tbsp of sugar for sweetness.

Finally, add 2 Tbsp of sesame oil for a nutty aroma and stir well to combine all the ingredients, creating your complete sauce.

Place the prepared pork shoulder into the sauce and mix it thoroughly with your hands, like ‘jo-mul jo-mul’. Let it marinate for about 10 minutes to allow the flavors to meld for an even tastier result.

Heat a frying pan over medium-high heat. Add the marinated pork and begin to stir-fry. Cook until the surface of the pork starts to brown.

When the pork is about 70% cooked, add the firmer vegetables – onion, carrot, and shiitake mushrooms – and stir-fry together. Cook until the vegetables are slightly softened.

In the final step, add the chives and Korean red chili peppers to the side of the pan and stir-fry briefly. Chives become mushy if overcooked, so cook them just until they wilt. Finally, sprinkle with black pepper to taste. Your delicious pork bulgogi with chives is ready! Enjoy it with a warm bowl of rice.
