Main Ingredients

  • Fresh Oysters 152g
  • Korean Radish (Mu) 201g
  • Zucchini (Ae-hobak) 86g
  • Red Chili Pepper 1 pc
  • Green Chili Pepper (Cheongyang) 1 pc
  • Water 800ml

Seasoning

  • Minced Garlic 1 Tbsp
  • Salted Fermented Shrimp (Saeu-jeot) 1 Tbsp
  • Fish Sauce (Eo-ganjang) 2 Tbsp (Soy sauce or anchovy sauce can be substituted)
  • Salt 0.5 Tbsp (adjust to taste)

Cooking Instructions

Step 1

First, prepare the vegetables that will make your Oyster and Radish Soup so flavorful. Slice the zucchini into bite-sized pieces, about 0.5cm thick, and the radish into thin, half-moon shapes. Thinly slice the red and green chili peppers diagonally. To clean the oysters, gently rinse them under cold water or wash them with the leftover radish juice from slicing the radish to help remove any gaminess. Drain the cleaned oysters well.

Now, let’s bring out the deep flavor of the soup. Place the sliced radish in a pot and add 800ml of water. Bring to a boil over medium-low heat. Once boiling, cover and let it simmer for about 10 minutes, or until the radish becomes translucent and tender. It’s important to cook the radish first as it takes the longest to soften, allowing its refreshing flavor to infuse the broth.

Once the radish is partially cooked, add the sliced zucchini to the pot. Zucchini cooks quickly, so avoid overcooking. Let it simmer for a short while after adding the zucchini.

It’s time to season the soup. When the zucchini is slightly tender, add 1 Tbsp of minced garlic, 1 Tbsp of salted fermented shrimp (saeu-jeot), and 2 Tbsp of fish sauce (eo-ganjang). If you don’t have eo-ganjang, you can use regular soy sauce or anchovy sauce. Finally, add 0.5 Tbsp of salt and taste. Adjust the seasoning according to your preference. Remember, it’s best to add seasonings gradually to enhance the natural flavors of the ingredients.

Once the soup comes to a rolling boil after all the seasonings are added, gently put in the fresh oysters and the diagonally sliced chili peppers (red and green). Oysters can become tough if overcooked, so simmer for about 5 minutes after adding them before turning off the heat. This ensures the oysters retain their fresh taste and aroma.
