On days when a warm, comforting soup is just what you need, I made this hearty Kimchi Mandu Guk. The deep flavor of kimchi combined with the delicious dumplings is simply superb!

Key Ingredients

  • 10 Frozen Kimchi Dumplings
  • 1/2 Scallion (or to taste)
  • 2 Eggs
  • 1 Anchovy-Kelp Broth Pack
  • 2 Tbsp Soy Sauce (Guk-ganjang preferred)
  • 800ml Water
  • 5 cloves Garlic, minced (approx. 1 Tbsp)

Cooking Instructions

Step 1

In a pot, combine 800ml of cold water with 1 Anchovy-Kelp Broth Pack. Let it sit for about 5 minutes to allow the flavors to start infusing into the water.

While the broth is steeping, finely mince the 5 cloves of garlic. This step is crucial for adding depth and deliciousness to your soup.

After 5 minutes, place the pot over medium heat and simmer for about 10 minutes to create a rich broth. Once the broth is flavorful, remove and discard the broth pack.

Add the minced garlic (1 Tbsp) to the well-brewed broth. This will enhance the soup’s aroma and taste.

Stir in 2 Tbsp of soy sauce (Guk-ganjang is recommended for soups) to season the broth. It’s best to start with less and adjust the seasoning to your preference.

Now, carefully add the 10 frozen kimchi dumplings to the pot.

Cover the pot and let it simmer for about 5 minutes, or until the dumplings are cooked through and plump. You’ll know they’re ready when they start to float and look fully inflated.

While the dumplings are cooking, thinly slice the scallion and lightly beat the 2 eggs in a separate bowl.

Once the dumplings are cooked, slowly drizzle the beaten eggs into the simmering soup, swirling them around the edges. Gently stir to create beautiful egg ribbons.

Finally, sprinkle the sliced scallions evenly over the top as a garnish. The fresh green scallions add a nice visual appeal and a fresh aroma.

Continue to simmer for another minute after adding the scallions. If desired, add a pinch of black pepper to finish. Pepper helps to balance the flavors and provides a clean finish.
