Main Ingredients- 2 medium cucumbers
- 6 fresh chilies (such as green chilies or jalapeños, adjust to your spice preference)
Seasoning- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp soup soy sauce (or regular soy sauce)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- Pinch of shiitake mushroom salt (or regular salt, if unavailable)
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp soup soy sauce (or regular soy sauce)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp sesame oil
- Pinch of shiitake mushroom salt (or regular salt, if unavailable)
Cooking Instructions
Step 1
First, wash the cucumbers thoroughly under running water. You can peel them thinly or leave the skin on, depending on your preference. Slice them into bite-sized pieces, about 0.5 cm thick. Remove the stems from the chilies, wash them, and then chop them into similar lengths as the cucumber slices (about 2-3 cm).

In a small bowl, combine the soup soy sauce (1 Tbsp), minced garlic (1 Tbsp), gochugaru (1 Tbsp), and sesame oil (1 Tbsp). Whisk well to create the dressing.
