Main Ingredients

  • 1/2 head Napa cabbage (approx. 300g)
  • 50g glass noodles
  • 1/2 stalk green onion
  • 160g ground pork
  • 1/2 red chili pepper
  • 1 tsp salt
  • Pinch of black pepper
  • 1 Tbsp mirin (rice wine)
  • A little cooking oil
  • 1 Tbsp cornstarch
  • 3 Tbsp water (for cornstarch slurry)

Seasoning Sauce

  • 3 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp rice wine
  • 1 Tbsp fish sauce (anchovy)
  • 1 Tbsp corn syrup
  • 1 tsp minced garlic
  • Pinch of black pepper
  • 90ml water

Cooking Instructions

Step 1

First, prepare the glass noodles. Soak 50g of glass noodles in hot water for about 15 minutes until softened. This helps achieve a chewy texture when stir-fried. Drain the soaked noodles and set them aside.

Marinate the ground pork. In a bowl, combine 160g of ground pork with 1 Tbsp of mirin, 1 tsp of salt, and a pinch of black pepper. Mix well. This step removes any porky smell and tenderizes the meat.

Wash the Napa cabbage thoroughly. Shred 1/2 head of Napa cabbage into strips about 1.5cm wide. Cutting them into bite-sized pieces ensures they cook evenly and maintain a pleasant crunch.

Slice 1/2 red chili pepper into thin rounds. Finely chop the 1/2 stalk of green onion. These will add color and aromatic depth to the dish.

Now, let’s make the star of the dish – the seasoning sauce! In a separate bowl, whisk together 3 Tbsp soy sauce, 1/2 Tbsp oyster sauce, 1 Tbsp gochugaru, 1 Tbsp rice wine, 1 Tbsp fish sauce, 1 Tbsp corn syrup, 1 tsp minced garlic, and a pinch of black pepper. Pour in 90ml of water and stir until all the ingredients are dissolved. Your delicious seasoning sauce is ready!

Heat a little cooking oil in a wok or deep pan over medium heat. Add the marinated ground pork and chopped green onion. Stir-fry until the water from the pork has evaporated and it’s lightly browned. Remove the cooked pork and green onion and set aside in another dish.

In the same pan, add the shredded Napa cabbage. Stir-fry just until the cabbage starts to soften slightly. Be careful not to overcook it, as you want to retain its crispiness.

Now, return the cooked pork and green onion to the pan with the cabbage. Add the sliced red chili pepper and the prepared seasoning sauce. Finally, add the soaked glass noodles. Increase the heat to high and stir-fry quickly until everything is well combined and coated in the sauce. For a thicker, glossier sauce, mix 1 Tbsp cornstarch with 3 Tbsp water to create a slurry, then pour it in while stir-frying.
