Main Ingredients- 330g Warm Cooked Rice
- 60g Spam (half a can)
- 1 packet Seasoned Seaweed Flakes (Gim-garu, 5g)
- 2 strips Pickled Radish (Danmuji, 27g)
- 1 Fresh Egg
Cooking Instructions
Step 1
Lightly rinse the 60g of Spam under running water, then dice it into small pieces, about 5mm thick. Smaller pieces will blend better with the rice.
Step 2
Heat a lightly oiled frying pan over medium heat. Add the diced Spam and sauté until golden brown and slightly crispy. Sautéing it well brings out its savory flavor.
Step 3
Rinse the pickled radish strips briefly in water to reduce their saltiness, then finely chop them. The crunchiness and sweet-sour taste of the radish will enhance the rice balls. (Adjust the amount of pickled radish to your preference.)
Step 4
Place the warm cooked rice in a large bowl. Add the sautéed Spam and chopped pickled radish. It’s best to taste and adjust the seasoning at the end, as the amount of rice can affect the saltiness. Avoid over-seasoning initially.

In a separate frying pan, add a little olive oil and heat over medium heat. Crack in the egg and sprinkle with one pinch of salt. We’re making a soft scrambled egg.

Before the egg is fully cooked, gently stir it with a spoon or chopsticks to create a soft scramble. Turning off the heat when the egg is about 60-70% cooked and letting residual heat finish it will result in a moist and tender texture.

Gently mix the rice, sautéed Spam, and pickled radish in the large bowl with a spatula. Then, add the prepared soft scrambled egg to the mixture.

Tear or cut the packet of seasoned seaweed flakes (Gim-garu) into smaller pieces, like crumbs, to sprinkle into the rice balls. This adds a delicious savory flavor and makes them look more appealing.

Add 1.5 Tbsp of perilla oil for a nutty depth of flavor and a sprinkle of sesame seeds. The subtle aroma of perilla oil complements the saltiness of the Spam perfectly.

Now, use the spatula to gently combine all the ingredients. Mix thoroughly without mashing the rice grains, ensuring everything is evenly distributed.

Put on disposable gloves. Take a portion of the rice mixture and shape it into round balls. Using disposable vinyl gloves with a textured surface (like embossing) makes it easier to handle the rice without it sticking. Form them into bite-sized spheres.
