Ingredients

  • 1 packet of Odon-tong noodles (thick ramen noodles)
  • 100g radish
  • 1 Tbsp minced garlic
  • 3 Tbsp chopped scallions
  • 3 Tbsp cooking oil
  • 1 Tbsp soy sauce
  • 1/2 Tbsp red pepper flakes (gochugaru)
  • 1 handful dried seaweed (miyeok)

Chop the scallions into 3 tablespoons worth, aiming for about 0.5cm thickness. Using the white parts of the scallions will yield a richer flavor.

Heat 3 tablespoons of cooking oil in a pot over medium heat. Add the chopped scallions and minced garlic, sautéing until the garlic turns golden brown and fragrant. Once the garlic is fragrant, add the sliced radish and stir-fry over high heat for 1 minute.

In an empty spot of the pot, add 1 tablespoon of soy sauce and let it sizzle for about 5 seconds, as if caramelizing slightly. Then, stir the ingredients together with the soy sauce 2-3 times to ensure even coating.

Once the soy sauce is well incorporated into the ingredients, reduce the heat to medium. Add the red pepper flakes, the ramen’s vegetable mix packet, and the ramen soup base.

Stir-fry the ingredients over medium heat for about 20-30 seconds. Then, pour in 650cc of water (about 100cc more than the standard ramen amount).

After adding the water, toss in about one handful of dried seaweed. The seaweed will add a lovely texture and subtle flavor to the broth.

Once the water comes to a rolling boil, add the ramen noodles. Cook until the noodles are tender, typically around 3-4 minutes. Adjust cooking time to your preferred noodle texture.
