Ingredients- 100g Dried Fern
- 1.5 Tbsp Minced Garlic
- 3 Tbsp Korean Soy Sauce (Guk-ganjang)
- 1 Tbsp Crab Roe Soy Sauce (Daege Baek-ganjang)
- 2 Tbsp Sesame Oil
- 2 Ladles (approx. 200ml) Dried Pollack Broth
- 2-3 Tbsp Chopped Scallions
- 2-3 Tbsp Hulled Perilla Seed Powder
- 1 Tbsp Perilla Oil
Cooking Instructions
Step 1
Cut the pre-soaked and boiled dried fern into bite-sized pieces, about 3-4 cm long. In a bowl, combine the fern with minced garlic, Korean soy sauce, crab roe soy sauce, and sesame oil. Gently mix and marinate the fern, allowing the flavors to penetrate deeply for enhanced taste. Heat a pan over medium heat and stir-fry the marinated fern. Be sure to stir occasionally to prevent sticking.
Step 2
Once the fern is slightly stir-fried, add about 2 ladles of dried pollack broth. Continue to stir-fry, allowing the broth to reduce and the fern to become moist and tender. The broth will infuse the fern with a rich, savory flavor. Cook until the broth has mostly evaporated.
Step 3
Add 2-3 tablespoons of chopped scallions to the stir-fried fern and gently toss to combine. The subtle sweetness and aromatic fragrance of the scallions will further elevate the flavor of the dish. Once mixed well, turn off the heat.
Step 4
With the heat off, sprinkle in 2-3 tablespoons of hulled perilla seed powder. The nutty and savory flavor of the perilla seeds will add another layer of depth and richness to the dish.
Step 5
Finally, drizzle 1 tablespoon of perilla oil for a fragrant finish and gently mix everything together. It’s crucial to add the perilla seed powder and perilla oil after turning off the heat to preserve their delicate nutty aroma. Your delicious stir-fried dried fern is ready to be enjoyed!
