Fragrant Homemade Kaya Jam with a Touch of Orange

Kaya Jam Ingredients- 5 fresh eggs (3 egg whites + 5 egg yolks)
- 300ml high-quality coconut milk (shake well if using canned)
- 150g coconut sugar or brown sugar (adjust to taste)
- 75ml fresh orange juice (from approx. 2-3 oranges)
Cooking Instructions
Step 1
First, prepare your coconut sugar or brown sugar. If there are any large lumps, break them down into smaller pieces. This will help the sugar dissolve more easily in the liquids later, resulting in a smoother jam texture.
Step 2
In a bowl, crack in the eggs (3 egg whites and 5 egg yolks). Add the prepared coconut sugar (or brown sugar) and the coconut milk. Use an immersion blender (or a regular blender) to mix everything until the sugar is completely dissolved and the mixture is smooth and uniform. Ensure there are no lumps for the best consistency.
Step 3
Wash the fresh oranges thoroughly and peel them. Then, take the orange flesh only and blend it until smooth using a blender or juicer to extract the juice. Make sure to remove any seeds from the oranges for a smoother jam texture.
Step 4
Strain the freshly extracted orange juice through a fine-mesh sieve. Discard the pulp and seeds, using only the clear juice. This step is crucial for achieving a silky-smooth jam consistency.
Step 5
Now it’s time to cook the jam. Pour the egg, sugar, and coconut milk mixture into a saucepan. Place the saucepan over a double boiler (a pot with simmering water) and cook over low heat for 20 minutes, stirring occasionally. Double boiling prevents the mixture from scorching or sticking to the bottom, ensuring even cooking.
Step 6
After 20 minutes, you’ll notice the mixture has thickened slightly. At this stage, pour the strained orange juice bit by bit into a separate bowl. Gradually add the hot jam mixture from the saucepan to the orange juice, stirring constantly as you combine them. Adding the orange juice gradually helps to maintain a smooth consistency.
Step 7
Continue to simmer over low heat, stirring constantly, until the jam reaches your desired consistency. It might seem runny at first, but it will thicken as it cooks. Be patient! I simmered mine for an additional 25 minutes, making the total cooking time around 45 minutes. Remember that the jam will thicken further as it cools, so it’s best to remove it from the heat when it’s slightly looser than your final desired consistency. Once cooled completely, store the Kaya Jam in a clean, airtight container in the refrigerator.
