  • Occasion : Everyday
  • Cooking : Grilled / Roasted
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • 4 medium eggplants
  • 1 stalk of green onion (mainly the white part)

Seasoning Sauce

  • 0.5 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, wash the eggplants thoroughly. Then, slice them into pieces about 1 cm thick, making them easy to eat. Slicing them to a moderate thickness is important, as they can easily fall apart if too thin.

Step 1

Step 2

Finely chop the green onion, focusing on the white part. This will add a fragrant aroma to the dish.

Step 2

Step 3

Heat a non-stick frying pan over medium-low heat without adding any oil. Place the sliced eggplants in the pan and roast them until golden brown on both sides. As the eggplant cooks, it will release its moisture and soften naturally. Roasting slowly over medium-low heat will ensure it becomes extra tender without burning.

Step 3

Step 4

Once the eggplant is nicely browned, transfer it to a large bowl. Letting the steam escape for a moment will be beneficial.

Step 4

Step 5

Now, let’s make the delicious seasoning sauce! First, add 1 tablespoon of minced garlic to the roasted eggplant in the bowl.

Step 5

Step 6

Drizzle in 1 tablespoon of sesame oil for a rich, nutty flavor.

Step 6

Step 7

Add 2 tablespoons of soy sauce, which forms the base of the umami flavor.

Step 7

Step 8

Add 0.5 tablespoon of oyster sauce for a special depth of flavor. If you don’t have oyster sauce, fish sauce can also be used for a delicious result.

Step 8

Step 9

Finally, add all the chopped green onions and mix well to ensure the seasoning is evenly distributed.

Step 9

Step 10

Sprinkle 1 tablespoon of toasted sesame seeds on top and gently toss to combine. Your fragrant and delicious roasted eggplant salad is ready! It’s also wonderful served over rice as a simple rice bowl.
