Ingredients

  • 7 green peppers
  • 1 Tbsp soy sauce
  • 1/4 Tbsp sugar
  • 1 Tbsp perilla seed powder
  • Pinch of black pepper

Cooking Instructions

Wash the green peppers thoroughly under running water. Trim off the stems and cut each pepper in half lengthwise. This makes it easier to remove the seeds.

Place the halved green peppers on a cutting board. Use a spoon or a small knife to carefully scrape out and discard the seeds from the inside of each pepper half. Leaving seeds can result in bitterness or an unpleasant texture. If using very young, tender peppers, you might be able to skip this step as they often have fewer seeds.

Once the seeds are removed, slice the green peppers into strips about 0.5 cm (or roughly 1/4 inch) wide. Slicing them too thinly might cause them to become mushy when stir-fried. Aim for a moderate thickness to retain a pleasant crispness.

Heat about 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add all the sliced green peppers to the pan. Stir-frying green peppers on medium-low heat, rather than high heat, prevents them from releasing too much moisture and helps them cook down to a tender consistency. Stir-fry for about 2-3 minutes, or until the peppers begin to soften.

As the green peppers start to soften, add 1 tablespoon of soy sauce and 1/4 tablespoon of sugar to the pan. Continue to stir-fry, ensuring the sauce evenly coats the peppers. Be mindful of the seasoning; you can adjust the amounts slightly if needed.

When the soy sauce has been absorbed by the peppers and they look glossy, sprinkle in 1 tablespoon of perilla seed powder and a pinch of black pepper. Stir quickly to combine everything. Avoid overcooking after adding the perilla seed powder, as it can sometimes develop a bitter taste. Stir just once or twice to distribute, then immediately turn off the heat. The dish is ready when you can smell the wonderful nutty aroma of the perilla seeds!
