Ingredients

  • 1 pack King Oyster Mushrooms (approx. 200g)
  • 1.5 Tbsp finely minced onion
  • 1.5 Tbsp finely minced green onion (white part)
  • 1.5 Tbsp finely minced carrot
  • 3 Eggs
  • 0.4-0.5 tsp MSG salt or regular salt (adjust to taste)
  • Pinch of black pepper
  • 1 tsp sesame oil
  • Cooking oil (for frying), sufficient amount

Cooking Instructions

First, trim off the tough bottom part of the King Oyster Mushrooms with a knife. Then, gently tear the mushrooms into manageable strands or pieces by hand. Lightly rinse the torn mushrooms under cold running water, front and back, and pat dry.

Place the rinsed King Oyster Mushrooms in a microwave-safe bowl. Cover with plastic wrap, and poke several holes in the wrap with a fork or toothpick to allow steam to escape. Microwave on high for about 2 minutes and 30 seconds.

Carefully remove the bowl from the microwave, as it will be hot. Let it cool slightly, then firmly squeeze out as much water as possible from the mushrooms using your hands. This step is crucial for achieving a chewy texture.

Transfer the squeezed mushrooms onto a cutting board and finely chop them with a knife. Break up any clumps as you chop to ensure a pleasant texture in the finished pancake.

Meanwhile, finely mince the green onion, onion, and carrot. Aim for a similar size to the chopped mushrooms for a harmonious bite.

In a large bowl, combine the finely chopped King Oyster Mushrooms and all the minced vegetables. Add the MSG salt (or regular salt) (0.4-0.5 tsp), a pinch of black pepper, and 1 tsp of sesame oil. Mix everything thoroughly with a spoon or your hands until well combined and the flavors begin to meld.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Once the oil is hot, use a tablespoon to scoop portions of the mixture and place them onto the pan, spacing them apart and forming round shapes. Be mindful of the heat; too high a flame can burn them quickly.

When the edges of the pancakes start to look cooked and you can gently shake the pan to move them, it’s time to flip. Carefully turn each pancake over using a spoon or spatula.

After flipping, gently press down on each pancake with the back of your spoon. This helps ensure they cook through evenly and become extra crispy. Continue cooking until the other side is also golden brown.
