Today, we’ve made a special pancake using delicious fish cakes and healthy oatmeal flour. The spicy Cheongyang peppers cut through any richness, and the chewy fish cake texture is superb.   • 10 sheets of rectangular fish cake
  • 7 Cheongyang peppers
  • 1 onion
  • 3 eggs
  • 1 Tbsp oatmeal flour
  • 1 Tbsp pancake mix
  • A pinch of salt
  • A pinch of black pepper
  • Generous amount of cooking oil

Cooking Instructions

First, to remove excess oil and additives from the fish cakes, blanch them in boiling water for about 10 seconds. This step ensures a cleaner and tastier pancake.

Wash the Cheongyang peppers thoroughly using baking soda and running water. Cut them in half, scrape out the seeds with a spoon, and finely chop them. These will add a refreshing spiciness.

Here’s a tip for removing Cheongyang pepper seeds: After cutting the pepper in half, use a teaspoon to scrape along the inner surface. This makes seed removal quick and easy. Rinse lightly with water afterwards for a perfect clean.

Cut the blanched fish cakes into bite-sized pieces, about 1-1.5 cm thick. Finely chop the onion to a similar size as the fish cakes. Place the prepared fish cakes and onion into a large bowl.

Add 3 eggs to the bowl with the fish cake and onion. Sprinkle in 1 tablespoon of oatmeal flour and 1 tablespoon of pancake mix. The oatmeal flour adds a nutty flavor and health benefits, while the pancake mix helps thicken the batter.

Season with a pinch of salt and a pinch of black pepper according to your preference. Mix everything thoroughly until a cohesive batter forms. If the batter seems too thin, you can add a little more pancake mix. If you find the spice too much, consider substituting Cheongyang peppers with plenty of chives, or adding ingredients like imitation crab sticks, perilla leaves, carrots, or rehydrated glass noodles for a delicious twist!
