That’s why I decided to create this delicious flourless zucchini pancake recipe! It’s a wonderful way to enjoy a savory treat while keeping your diet in mind. Let’s make something healthy and tasty!

Ingredients for Healthy Flourless Zucchini Pancakes

  • 1/2 medium zucchini (or 1 small)
  • 10 cherry tomatoes
  • 2 fresh eggs
  • Scallions or green onions
  • Cooking oil (e.g., canola, grapeseed)
  • Salt
  • Tomato ketchup (optional)
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, wash the zucchini thoroughly. Cut it in half lengthwise, scoop out the seeds if desired, and then slice it into thin strips, about 0.3 cm thick. Halve the cherry tomatoes and finely chop the scallions or green onions.

In a large bowl, combine the sliced zucchini, halved cherry tomatoes, and chopped scallions. Crack in the 2 fresh eggs. Add a tiny pinch of salt to lightly season the mixture. Gently toss everything together until well combined, ensuring the eggs coat all the ingredients evenly. This forms your pancake batter.

Heat about 1 to 2 tablespoons of cooking oil in a non-stick skillet over medium-low heat. Swirl the pan to ensure the oil coats the bottom evenly. Wait until the oil is shimmering.
