Main Ingredients- 1/2 Onion, chopped into bite-sized pieces
- 1/4 Potato, peeled and chopped into bite-sized pieces
- 1/2 Bell Pepper, seeds removed and chopped into bite-sized pieces
- 1 handful Broccoli florets
- 50g Chicken breast, chopped into bite-sized pieces
- 1 handful Cooked chickpeas
- 2 Tbsp Cooked whole brown lentils
Cooking Instructions
Step 1
First, prepare the vegetables and chicken breast for the stew. Chop the onion, potato, and bell pepper into bite-sized pieces, about 1.5cm cubes. Make sure to peel the potato. Separate the broccoli into florets and chop the chicken breast into similar sizes. Have your cooked chickpeas and lentils ready.
Step 2
Heat 2 tablespoons of Vuco Organic Extra Virgin Coconut Oil in a frying pan over medium heat. The subtle aroma of coconut oil will enhance the stew’s flavor.
Step 3
Once the coconut oil is melted and shimmering, add the chopped onion, potato, and bell pepper. Sauté until the onions become translucent and the potatoes begin to soften slightly. Then, add the broccoli florets and chicken breast and continue to sauté for about 3-4 minutes until all ingredients are evenly cooked.
Step 4
Pour in enough water to cover about two-thirds of the ingredients. Approximately 150-200ml of water should suffice. You can adjust the amount of water based on your desired stew consistency.
Step 5
Reduce the heat to low, cover the pan, and let it simmer for about 10-15 minutes, or until the potatoes are completely tender and the liquid has reduced. Stir occasionally to prevent sticking to the bottom.
Step 6
Once the liquid has thickened and the ingredients are tender, slowly pour in 200g of Vuco Coconut Milk Premium. After adding the coconut milk, maintain a medium-low heat to prevent boiling over. Stir gently.
Step 7
Finally, add the prepared chickpeas and whole brown lentils. For a thicker consistency, you can stir in 2 tablespoons of rolled oats. Season with a pinch of black pepper and add 1/2 tablespoon of basil (dried or fresh) for extra flavor. Simmer for another 2-3 minutes, allowing all the flavors to meld together.
