Main Ingredients

  • Canned chicken breast 1 can (135g)
  • Sweet rice flour 2 Tbsp (for thin batter)
  • Water 2 Tbsp (for mixing sweet rice flour)
  • Frying mix/flour 4 Tbsp
  • Panko breadcrumbs 1 ladle (large ladle)
  • Cooking oil (like canola oil) adequate amount

Seasoning/Sauce

  • Tomato ketchup a little

Cooking Instructions

First, prepare the ingredients. Measure out 1 can (135g) of canned chicken breast, 2 Tbsp of sweet rice flour, 1 ladle (large ladle) of panko breadcrumbs, and 4 Tbsp of frying mix.

Prepare cooking oil (canola oil is recommended) for frying.

Open the can of chicken breast and pour its contents into a blender.

Blend the chicken breast until it’s finely pureed without adding any water. If it seems too dry, you can add a very small amount of water, but it’s best to blend it without any if possible.

Transfer the finely blended chicken breast to a large bowl.

Now, let’s make the sweet rice batter. Mix 2 Tbsp of sweet rice flour with 2 Tbsp of water in a 1:1 ratio to create a thin batter. Add this batter to the bowl with the chicken breast.

Add 4 Tbsp of frying mix to the chicken breast mixture.

Using a spatula or your hands, thoroughly mix the chicken breast, sweet rice batter, and frying mix until well combined. If the mixture feels too dry and stiff, add about 1 tsp of canola oil. This will make the dough much softer and easier to handle, preventing it from sticking to your hands. Shape the well-mixed dough into roughly round, bite-sized portions.

Spread about 1 ladle of panko breadcrumbs onto a wide plate. Roll each rounded chicken breast portion in the panko, ensuring it’s evenly coated on all sides. Once coated, put on disposable gloves and gently press the portions between your palms to form small, round croquette shapes.

Pour about 1 ladle of cooking oil (canola oil) into a deep pan or wok. Heat the oil over medium-high heat on the stove for about 5 minutes until it’s adequately hot.

Carefully place the panko-coated chicken breast croquettes into the preheated oil, making sure they don’t touch each other to prevent sticking.

Once the bottom side is golden brown and crispy, use tongs to carefully flip the croquettes and fry the other side until it’s also golden and crispy. Ensure all sides are evenly cooked.
