Today, I’ll introduce Baek Jong-won’s cucumber salad recipe, which is refreshing, sweet, and sour, yet has a clean taste that whets the appetite. It’s perfect as a side dish for lunchboxes because it’s so easy to make!

Step 2
First, wash the cucumber thoroughly. Rubbing the cucumber’s surface with coarse salt not only removes impurities but also slightly roughens the surface, helping the seasoning to adhere better.

Gently scrape off the protruding bumps on the cucumber with the back of a knife. You can skip this step, but removing them makes the cucumber’s texture even softer.

Slice the cucumber into bite-sized rounds. Thinly slice the onion as well, similar in thickness to the cucumber. Slicing thinly allows the seasoning to penetrate well, making it taste even better.
