Soft and Sweet Salad Bread

A few days ago, I made a delicious potato salad but regretted not having bread to go with it. Today, I’m rectifying that by creating these wonderful salad breads! This recipe brings back fond memories and is perfect for a satisfying snack or a light meal.

Bread and Filling Ingredients

  • 3 mini brioche buns (Morning bread)
  • 1/4 onion
  • 5 cm green onion (white part)
  • 1 potato (medium size)
  • 1 egg

Potato Salad Seasoning

  • 1 tsp salt
  • 2 tsp sugar
  • A pinch of black pepper

Cooking Instructions

Step 1

First, we’ll prepare the star of the salad bread: the potato and egg. Peel the potato and cut it into 2-3 cm pieces. Place the potato pieces and the egg in a steamer basket. Steam for about 15-20 minutes, or until the potato is tender when pierced with a fork. The egg should be hard-boiled.

While they are still warm, carefully peel the hard-boiled egg. Place the steamed potato and peeled egg into a large bowl. Mash them together using a masher or a fork. It’s nice to leave some texture rather than making it completely smooth for a better mouthfeel in the salad.

Now it’s time to season the potato salad. Add 1 tsp of salt, 2 tsp of sugar, and a pinch of black pepper to the mashed potato and egg mixture. Mix well. You can adjust the seasoning to your taste. For added flavor and crunch, finely dice the onion, soak it in cold water for 5 minutes to remove harshness, then squeeze out the excess water before mixing it in. Finely mince the white part of the green onion as well to add a subtle aromatic touch.

Finally, let’s assemble the salad bread! Carefully slice the soft mini brioche buns in half horizontally, being careful not to break them. Generously fill the hollowed-out buns with the prepared potato salad mixture. To finish, drizzle some ketchup over the top for that classic sweet and tangy flavor. Your delicious salad bread is ready to be enjoyed immediately, or you can chill it in the refrigerator for a refreshing treat.
