Tired of the hassle of disposable skewers? Enjoy this easy and delicious Skewered Fish Cake Soup using the convenient GORAE-SA skewers! We’ve prepared two versions: a clear and refreshing soup using katsuobushi broth, and a spicy, invigorating soup enhanced with kimchi brine. This recipe features generous amounts of fish cakes and chewy rice cakes, with the option to add udon noodles and fen duan fen to make it even more satisfying.
Ingredients- 5 skewers of fish cake
- 3 skewers of rice cake (mul-tteok)
- 1 serving of udon noodles
- 3 servings of fen duan fen (starch noodles)
- 2 ladles of kimchi brine
- 1 packet of katsuobushi broth base
- 2 Tbsp minced garlic
- 1 stalk of green onion
- 2 cubes of concentrated broth (or 2 cups of anchovy-kelp broth)
- Pinch of black pepper
- 1400ml water
Cooking Instructions
Step 1
First, prepare for two distinct flavors: a clear soup and a spicy soup. Get two pots ready. In one, add the katsuobushi broth base. In the other, add the kimchi brine. For the clear soup, add 1 concentrated broth cube, 1 Tbsp minced garlic, and some of the chopped green onion. For the spicy soup, add the other concentrated broth cube, the remaining 1 Tbsp minced garlic, and all the remaining green onion. (Tip: Use the white parts of the green onion for the broth and the green parts as a garnish.)
Step 2
Pour 700ml of water into each pot (totaling 1400ml). Now, turn the heat to high to start boiling the broth.
Step 3
Once the broth in both pots is boiling vigorously, carefully add the skewered fish cakes and rice cakes to their respective pots. Bring it back to a boil, then reduce the heat to medium-low and let it simmer gently. This simmering process allows the flavors to deeply infuse the fish cakes and rice cakes, and also draws out deliciousness from the ingredients themselves, resulting in a richer broth.
Step 4
When the fish cakes and rice cakes have absorbed enough of the broth’s flavor, it’s time to add the noodles. Add the udon noodles to the clear fish cake soup and the fen duan fen to the spicy kimchi fish cake soup. After adding the noodles, turn the heat back up to high and bring it to a rapid boil. Cook just until the udon noodles are done. This signifies the end of cooking.
