Cooking Instructions

Step 1

There are typically two main ways to enjoy persimmons like Daebong: peeling them to dry into ‘Ggotgam’ (dried persimmons), or leaving them as is to ripen into soft, sweet ‘Hongsi’. Today, we’ll focus on perfecting the ‘Hongsi’ method.

Step 1

Step 2

When left as they are, persimmons naturally soften as they ripen. However, the parts where they touch can become overly soft and even burst. To prevent this and ensure even ripening, we need a smart storage approach.

Step 2

Step 3

First, prepare a clean box or basket. Arrange the Daebong persimmons carefully, placing them in a single layer so they don’t touch each other. Ensure there’s a little space between each persimmon to allow for good air circulation. Pro-tip: Placing straw or reeds at the bottom of the box before arranging the persimmons can further enhance air circulation and promote even ripening.

Step 3

Step 4

Crucial tip: Do NOT wash the persimmons! The powdery white bloom on the skin is a natural protective layer that helps maintain freshness. Washing can cause them to spoil quickly. Just gently wipe off any dirt or dust with a dry cloth and store them as they are.

Step 4

Step 5

For faster ripening, place an apple along with the persimmons. The ethylene gas released by the apple can help speed up the ripening process, turning your persimmons into delicious Hongsi more quickly.

Step 5

Step 6

Cover the top of the persimmons with a sheet of newspaper. This helps to regulate moisture and protect them from the environment, aiding in better storage. *If your storage box lacks good ventilation, consider poking a few small holes in the sides of the box. This will improve airflow, preventing spoilage and ensuring the persimmons ripen uniformly.

Step 6

Step 7

Place the prepared box of persimmons in a cool, well-ventilated area, such as a balcony. Allow them to ripen naturally. This process typically takes about 5 to 15 days, but the exact time can vary depending on the persimmons’ condition and the ambient temperature. *While ripening in a warmer spot will speed things up, it also increases the risk of spoilage. Conversely, slow ripening in a cooler environment is said to yield a richer, deeper sweetness, so choose your spot based on your preference.

Step 7

Step 8

After a few days, you should notice your Daebong persimmons softening into sweet Hongsi. Keep in mind that the ripening speed and final texture can differ significantly based on the initial state of the persimmons and the storage conditions (like temperature), so check on them regularly.

Step 8

Step 9

Once perfectly ripe and soft, these Hongsi are quite perishable. To enjoy them for longer, it’s best to eat them soon after ripening or preserve them properly. Wrap each ripe Hongsi individually in aluminum foil and freeze them. This way, you can savor their sweet, juicy goodness anytime!

Step 9

Step 10

A vital note for freezing: Never freeze underripe persimmons! If you do, they will retain a bitter, astringent taste even after thawing, which can be quite unpleasant. Always ensure your persimmons are completely ripe and soft before freezing to guarantee a deliciously sweet experience when you finally enjoy them.
