Main Ingredients

  • 1 King Oyster Mushroom
  • 1 pack Enoki Mushrooms
  • 3 Shiitake Mushrooms

Cooking Instructions

Step 1

First, trim the root ends of the enoki mushrooms. Quickly rinse them under running water and gently shake off excess moisture. Then, carefully separate the mushrooms into individual strands by hand. This will help maintain a better texture.

Step 1

Step 2

Wash the king oyster mushrooms, trim off the ends, and slice them lengthwise into about 0.5 cm thick pieces. Slicing them not too thinly will give them a satisfying chew.

Step 2

Step 3

Lightly rinse the shiitake mushrooms under running water, remove the tough stems, and thinly slice them crosswise into about 0.3 cm thick pieces. Thin slices will cook evenly with the other mushrooms.

Step 3

Step 4

In a preheated pan, combine and add the olive oil and sesame oil. Olive oil helps bring out the mushrooms’ natural flavor, while sesame oil adds a wonderful nutty aroma.

Step 4

Step 5

Once the oil is heated, add all the prepared mushrooms: king oyster, shiitake, and enoki. Using a variety of mushrooms will result in a more complex and enjoyable flavor profile.

Step 5

Step 6

Stir-fry the mushrooms over high heat. Be aware that mushrooms release a lot of water. Season with 2 pinches of salt and 1 tablespoon of oyster sauce at this stage. The oyster sauce will enhance the umami of the mushrooms significantly.

Step 6

Step 7

As the mushrooms cook, they will release moisture. To evaporate this excess liquid and achieve the best texture, maintain high to medium-high heat. This prevents the mushrooms from becoming soggy and keeps them pleasantly firm.

Step 7

Step 8

Check the mushrooms for doneness and taste for seasoning. If you feel it needs a little more saltiness or depth, you can add a tiny bit more salt or oyster sauce, to your preference.

Step 8

Step 9

Once most of the mushroom’s liquid has evaporated and the mushrooms are nicely cooked, turn off the heat. Finally, sprinkle with sesame seeds for an extra nutty flavor and aroma. Your delicious mixed mushroom stir-fry is ready!

Step 9

Step 10

There you have it – a wonderfully savory mixed mushroom stir-fry with oyster sauce! It’s fantastic served over a bowl of warm rice or as a delightful accompaniment to grilled meats.
