Spicy & Sweet Stir-Fried Fish Cakes (Eomuk Bokkeum)

I’m 7 months into married life! Thanks to my husband who loves fish cakes, I’ve stir-fried them almost daily and mastered this recipe! This dish is perfect as a side for rice or even as a snack.

Main Ingredients

  • 7 sheets of Busan fish cakes (Eomuk)
  • 1 onion
  • 1/2 carrot
  • 1/2 stalk of green onion (or about half a handful)

Seasoning

  • 1 Tbsp soy sauce
  • 1 Tbsp plum extract (or corn syrup/oligosaccharide)
  • 1 Tbsp red pepper flakes (Gochugaru)
  • 1 Tbsp water

Cooking Instructions

Step 1

Today, we’ll be using premium fish cakes from Busan! We’ll bring out their chewy texture and deep flavor.

Prepare 7 sheets of fish cakes. You can use flat ones, rolled ones, or a mix according to your preference.

To remove excess oil and make them softer, blanch the fish cakes in boiling water for about 1 minute. Rinse them under cold water and squeeze out any excess moisture.

Slice the onion (julienned or diced) and the carrot (half-moons or thinly julienned). Finely chop the green onion. Cut all ingredients into bite-sized pieces for even cooking.

Heat a generous amount of cooking oil in a pan. Add the chopped green onion and stir-fry over medium heat until fragrant, creating scallion oil. This will add a wonderful aroma.

Once the scallion aroma is released, add the onion and carrot (excluding the fish cakes) to the pan. Stir-fry over medium heat until the onions become slightly translucent. Sautéing the vegetables first brings out their natural sweetness.

When the onions are translucent and the carrots are tender-crisp, add the drained fish cakes. Stir-fry them together, ensuring they absorb the flavors as you toss them.

Add 1 Tbsp soy sauce and 1 Tbsp plum extract (or corn syrup/oligosaccharide). Stir-fry quickly. At this stage, you have a basic soy-sauce based stir-fried fish cake. The subtle sweetness and umami are delicious.

If you prefer a spicier kick, add 1 Tbsp red pepper flakes and 1 Tbsp water. Continue to stir-fry for another 1-2 minutes until the red pepper flakes are well combined with the fish cakes and the dish develops a nice sheen. Your delicious spicy and sweet stir-fried fish cakes are ready! They are wonderful served over hot rice.
