I’ve made a delicious radish salad using winter radishes, which are full of sweetness this season. Even my picky eaters, who usually don’t like red foods or vegetables, can finish a bowl of rice with just this side dish. Try this refreshing, sweet, and tangy radish salad when your appetite is low!

Main Ingredients

  • 1/2 winter radish (approx. 300g)
  • A little bit of white part of green onion

Seasoning Ingredients

  • 2 Tbsp red pepper flakes
  • 1 tsp fine salt
  • 1 Tbsp minced garlic
  • 3 Tbsp sugar
  • 3 Tbsp vinegar
  • 1 Tbsp sesame seeds

Cooking Instructions

Thoroughly peel the fresh winter radish and then julienne it into strips about 0.5cm thick, ensuring they are not too thick. If the julienned pieces are too thick, they may take longer to soften.

Prepare the white parts of the green onion by finely chopping them. The slightly pungent aroma of the green onion will enhance the overall flavor of the radish salad.

Add the chopped green onion to the julienned radish. Then, add all the seasoning ingredients at once: red pepper flakes, salt, minced garlic, sugar, vinegar, and sesame seeds.

Gently mix everything with your hands until the seasoning is evenly distributed over the radish. Let it sit for about 10 minutes to allow the flavors to meld. If you eat it immediately, the radish might feel a bit stiff. Letting it rest allows the radish to naturally release its moisture, become tender, and absorb the seasonings deeply, making it much more delicious.

After 10 minutes, you’ll notice that the radish has released moisture and there’s a bit of liquid in the bowl. Give it another gentle mix. Taste the salad and, if it’s not salty enough for your preference, add a little more salt. If it tastes too salty, you can drain off some of the excess liquid and add a bit more julienned radish to balance the flavor.
