  • 100g spinach

First, rinse the rice thoroughly and soak it in water for about 30 minutes. Soaking the rice beforehand will help it cook more evenly and become softer.

Peel the carrot and onion. Finely dice both vegetables into small, uniform pieces. This ensures they distribute evenly throughout the porridge for a pleasant texture.

Remove the stems from the shiitake mushroom. Dice the mushroom cap into small, cube-like pieces. If using dried shiitake mushrooms, rehydrate them in warm water before dicing.

Wash the fresh spinach carefully under running water, paying attention to the roots to remove any dirt. Trim off any tough ends of the spinach leaves and roots for a more tender texture.

Now, let’s start cooking the porridge. Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the diced carrot and onion and sauté until the onion becomes translucent. Then, add the soaked rice and stir-fry it together with the vegetables for a minute or two. This helps to toast the rice slightly, adding a nutty flavor.

Once the rice grains become slightly translucent, pour in 7 measuring cups of water and 1 tablespoon of miso paste. Stir well to dissolve the miso completely. Bring the mixture to a boil over high heat.

After the porridge begins to boil, reduce the heat to medium-high and continue to stir constantly for about 10 minutes to prevent the rice from sticking to the bottom of the pot. Stirring helps the rice break down and create a creamy texture.

When the rice grains are fully cooked and have softened, add the prepared spinach, 1/2 tablespoon of tuna extract, and a pinch of salt to taste. Stir gently and let it simmer for another minute until the spinach is wilted. Be careful not to overcook the spinach, as it can lose its vibrant color.
