Silken Tofu and Seaweed Soup
Soft and Comforting Silken Tofu and Seaweed Soup
A healthy and simple soup, perfect for quick meals or when you’re aiming for a lighter diet.
Ingredients- 1 packet silken tofu (approx. 300-400g)
- 3 sheets of dried seaweed for kimbap
- 1/3 stalk of green onion
- 1 Tbsp soy sauce for soup (guk-ganjang)
- 1/3 tsp salt (or to taste)
- 1 Korean chili pepper (optional, for a spicier kick)
- 1 pack dried anchovy and kelp stock (or 600ml store-bought broth)
Cooking Instructions
Step 1
First, bring 600ml of water to a boil with the anchovy and kelp stock pack for 15 minutes to create a flavorful broth. Once done, remove and discard the stock pack.
Step 2
Prepare the 3 sheets of kimbap seaweed. If you are using pre-toasted seaweed or seasoned laver snacks, you can skip this step and add them directly to the broth. Ideally, you’d toast them over an open flame, but if using an induction cooktop, lightly toast them in a pan for 2-3 minutes per side. This step enhances the nutty aroma of the seaweed.
Step 3
Gently add the entire packet of silken tofu into the prepared broth. It’s best to gently break it apart as you add it so it doesn’t clump together.
Step 4
Place the toasted seaweed sheets into a disposable bag and crush them with your hands until they are crumbled. It’s nice to leave some slightly larger pieces for texture, rather than crushing them into a fine powder.
Step 5
Simmer the soup over medium-low heat. Once the silken tofu begins to heat up, add the crumbled seaweed and 1 tablespoon of soy sauce for soup to season. Since soy sauce for soup alone might not provide enough saltiness, taste the broth and add about 1/3 teaspoon of salt, adjusting to your preference. The delicate tofu and savory seaweed will start to meld beautifully.
Step 6
Finally, add the thinly sliced green onion and the chopped Korean chili pepper. (You can omit the chili pepper if you prefer it less spicy or don’t have green onion on hand.) Simmer for just another 1-2 minutes, and your soft and delicious silken tofu and seaweed soup is ready! If you enjoy a bit of heat, definitely include the chili pepper.
